Last night for dinner was chicken fingers, cheesy tots and cheese sauce. I know, I know, I’m not exactly the healthiest person alive but what can I, I LOVE my carbs and fried food. Hope that doesn’t clog my arteries all too much lol.
You can just see the sparkling grease hahah.
Of course alex and I had our noses and eyes stuck in the book “The Jungle” by Upton Sinclair. We procrastinated way too long and now have a week to read this whole book so we figured out we have to read 50 or so pages a day.
Yesterday’s reading = success. So of course we celebrated that and our anniversary of the first day of us talking by getting starbucks ice cream from the store. I have to admit I started typing ice cream with “eye” hahaha. I had two coupons for a dollar off the ice cream so we both got one. And of course we watched friends!
Alex has NEVER SEEN FRIENDS before!!! That is a crime. So fortunately my roommate has the whole series. When we first watched episodes I picked them by the seasons that Rachel’s hair looked the best. So we started around season 7 or 8 and Alex got hooked! So we finished the series and then started at season 1. We watch friends when we eat. 😀
I have a confession. When I was little I loved watching friends and LOVED Jennifer Anniston(still do) and I would always get my hair cut and styled whenever she changed her hair. Ha, creeper!
Breakfast this morning was a piece of peanut butter toast. I was in a hurry to get to class.
Today a 5 mile run is on the schedule but in all honesty it is REALLY COLD out!! So I’m hoping around 3pm it will get warmer like it usually does.
So Caitlin @healthytippingpoint is such an inspiration. Last year I actually made a new years resolution to learn to bike and swim so I could do a triathlon. That did not happen because I was not as motivated and last year I had a lot of injuries and had my surgery on my legs. You can read about that here.
The main goal this year is to complete my first half marathon which is on April 11th. I would love to be able to do a triathlon so I think I’m going to make another goal to compete in a duathlon or triathlon this summer. Depending on how well my swimming goes.
I am not a good swimming and cannot even tread water or float! I might enroll in a class or something because I love anything running related and triathlons are so fascinating!
Now when it comes to biking. When I was little I had a bad bike accident and I rarely rode since. Last summer Alex and I took bikes to go biking and I can bike, I just don’t like for 1. going fast for because I fear I’ll stop and fall over my handlebars and 2. I am not good at stopping or turning!
As you can see this is a big goal since the only thing out of the 3 I am good at is running!! I’m just waiting for nicer weather to bring my bike to school and for some time to go to the rec center pool and attempt to swim.

1. What is your favorite way to eat potatoes?
I enjoy mashed potatoes!! But only when they are nice and buttery! Of course I enjoy french fries, tater tots as well. I actually am not a fan of baked potatoes because I don’t like the skin. Now if they were skinned and then baked, that would A OK with me! 😀 Of course they would have to be lathered in butter, sour cream and cheese.
2. what is your favorite part of running?
I think my favorite thing about running is the sense of accomplishment and what running does for you. I just feel so much better after I have completed a run, especially a race. When I race it is pure ecstasy in a way. I lose all thought of anything but the race and think of my splits and how fast I just ran each mile and what I need in order to PR. It’s also a test to my body to see how much harder I can push myself in order to go faster. The human body is just pure amazement to me and how you can go from feeling like you’ve hit that “wall” and change gears into an all out sprint.
Then of course you have the more physical vain parts that are my favorite as well. I love knowing I can eat the same amount of food that I enjoy and be able to maintain my figure. To be able to balance out calories in and calories out. I enjoy seeing muscle definition from the hard miles I put in. Just to overall feel healthy about myself is why I love running!!
