I apologize that I don’t really blog on the weekend. This is mainly because I race almost every weekend and I’m at home with my family. This weekend was the frostbite 5k. In St. Louis a Frostbite series is hosted and it consists of 5 races.It’s hosted every other weekend. Let me break down my times so far.
Race 1: 3k(1.86 miles) — 13:29 @ 7:14 pace
Race 2: 2 mile —– 15:02 @ 7:31 pace (snow and ice on the ground)
Race 3: 5k —- 23:18 @ 7:30 pace (snow and ice on the ground) I also want to state that my 2 mile time in this race was 14:30 which beats my actual 2 mile above 🙂
Race 4: 4 mile
Race 5: 3 mile
Since the frostbite series is every other weekend, I do another hosted series called the Snowball series. These races are a bit longer.
Race 1: 4 miles — I don’t have an exact race time for this one because I overdressed and ended up sitting down in the race to pull my pants off. 😦
Race 2: 5 miles —–40:55 @ 8:00 pace (this race was actually 5.11 long and I PR’d this course by 5 minutes)
Race 3: 3 miles
Race 4: 4 miles
Alright, well Friday I went to the BF’s house and we made a delicious homemade dinner. It was Alfredo Linguine by Bertolli. It looked exactly like this:
Prep Time: 20 minutes
Cook Time: 10 minutes
Yield: 4 servings
- 1 tablespoon I Can’t Believe It’s Not Butter!® Spread
- 1/2 cup walnuts, chopped
- 1 large clove garlic, finely chopped
- 1 jar Bertolli® Creamy Alfredo Sauce
- 8 ounces linguine, cooked and drained
Melt Spread in 2-quart saucepan over medium heat and cook walnuts 3 minutes or until golden. Stir in garlic and cook 30 seconds. Stir in Sauce. Reduce heat to low and simmer, stirring occasionally, 3 minutes or until heated through. To serve, toss sauce with hot linguine. Sprinkle with additional chopped walnuts and garnish, if desired, with chopped fresh parsley.
There was walnut pieces in it, mmm. Definitely good pre race dinner. We also made texas toast and covered it in mozzarella. We sat down to dinner with some chocolate milk and watched the movie Mr. Deeds.
The next day was the race which was in the single digits and pretty cold. However it was only cold going one direction (against the wind) and luckily we didn’t have to go that way until the end of the race when we were already warm. After the race BF and I had lunch with his grandmother. We went to Amici’s, which is an italian place. I ordered the Tortellini Carbonara but without the peas! I am not a fan of vegetables. It looked a bit like this:
Then we took our friend Brad to Smoothie King for the first time! Of course he loved it. However, I feel my smoothies are practically better than theirs now! Just the select ones I make 🙂 Which saves me money and I can have them at school!!
I had a good laugh at the BF and brad attempt yogilates and pilates haha very funny!!!
Yesterday BF came over again and we went to Whole Foods. I love that store so much, in fact I will move to a place that has Whole Foods and Trader Joes close by. We are lucky now to have both just about a 20 minute drive away. I love all the samples at Whole Foods and the environment.
Now it is the start of my last week of break. I guess I should be thankful that I have another week, but parts of me don’t want to go back to school. I’m scared of my classes I think is the big part. Maybe I’m taking too many hard classes at a time. I’m going to relook at my schedule and see what I can do.
